I make this all the time when I need a quick and easy meal. Cooking is very tiring for me these days, so it's nice to have this to fall back on. The very definition of comfort food!

I often make this with salsa instead of tomatoes. The salsa adds a bit of a spicy perk to the meal.

I did a few changes ... I used half ground beef and half Italian sausage. Added 1/4 tsp Italian seasoning and 1/4 tsp minced garlic. This is an awesome simple meal! My 8 year old normally hates diced tomatoes in her Macaroni and Cheese and she asked for seconds!!!

This recipe is good and super quick for busy weeknights. I only gave it 3 stars because it doesn't have a ton of flavor, kinda bland, but the family will eat it so it is worth keeping in rotation. I think a can of original rotel might actually give it the flavor it is lacking.

My mom made this when I was a kid and called it beefaroni. She had used pasta sauce instead of canned tomatoes. I was a picky kid and this was one thing she made that I liked. I tried it for my picky eaters and they loved it too.

This is pretty good. Another easy variation is to cook macaroni and cheese according to the box, meanwhile brown some ground beef and onion, then drain. Mix beef and onion mixture, and one can of cream of mushroom soup into mac and cheese. Heat through and then serve.

Very Yummy! Changed out the ground beef for some lean ground turkey, and fresh instead of canned tomatoes!

My husband and I really like this meal. I have made it several times now. It is quick and easy to fix when you are in a hurry to eat. Great taste, too.

even better than cheddar cheese is some cubed velveeta melted in. very, very easy and good.
