I made this tonight and it was so yummy I had to comment... I kept the recipe the same except I added the whole bottle of zesty italian dressing in hopes of keeping the meat moist, and it worked! My roast weighed around 3.5 lbs, so I cooked it on high for about 6 hours. Then I shredded it, drained some liquid from crock pot, replaced shredded meat, and added the parmesan cheese. Turned crock pot to low, stirred in cheese and let sit for about 15 minutes. The shredded meat was very tender and the cheese definitely added great flavor. I will definitely make again!!!
