My mother in law has never complicated a dish I've made so much! Definitely a keeper. I also added taco seasoning and refried beans. Big hit with both kids and adults!
This one's a keeper! I substituted extra hot Rotel for the salsa and made my own pie crusts. Yummy!
This was absolutely wonderful and extremely easy. I browned the bottom crust a little first and I spread refried beans on the bottom and then put taco meat (used taco seasoning) on top along with the cheese and my home-made salsa and then after it was done, I topped it off with some more cheese, homemade salsa, fresh garden tomatoes and chives. My family went nuts for it.
LOVED by everyone, very easy to make, however I did adjust it as was suggested by others. Read through them, lots of good suggestions.
Made this and added a couple of items based on the comments from other reviews. Added a ¼ cup taco seasoning to the ground beef. After I drained the beef, I added about 1 cup of chopped onions along with the salsa cooked it another 5 minutes on low heat. Coated the bottom of the pie crust with refried beans with mild green chilies. Cooked it on a pizza stone , didn’t have to cook it 25 minutes or the crust would have burned, only had to cook it 20 minutes. The last 5 minutes, I covered the top of the empanada with more cheese and let it melt. Served it with sour cream and jalapenos. My husband’s comment was, “that was good, make it again”, high praise!!
I made this for my family last night and it was a HUGE hit! Even my picky 5 year old ate it! I agree with the other post, I did add a good lump of refried beans to the meat mixture to hold it together. Tasted great!! I also added cilantro, tomatoes and onion to the top. Finished it off with Lite Sour Cream. Special Note: It tasted even better today for lunch leftovers!! :)
Crowd pleaser...even my picky eater LOVED it and it was soooo easy to make.
Excellent! Loved the texture and the taste. Baked it on a Pyrex pizza pan and the bottom crust was not a bit soggy. Next time will add some chopped onion and a bit of salt to give it just a tad more flavor. Will definitely be making this again. Thanks for a quick and easy recipe.
This is a super easy recipe with just a few ingredients. It's absolutely delicious & can be adjusted for heat by using a medium or hot salsa. It can also be used with ground turkey for the non-beef eaters.
