I used egg beaters and since I didn't have any bacon, I used ground sausage and chunks of ham. It was delicious. The eggs were so creamy! Also I didn't have any parchment paper os tried tin foil. The seam allowed some small amoun of egg to seep between the 2 layers of foil. Will definitely make it again.

Excellent! Easier than I had anticipated; I was a little worried about rolling it up but no problems. The oregano really adds a lot of flavor to this recipe.

Delicious! Everyone loved it... will be making this over and over again. Be sure to spray really well so it doesn't stick. Delish!

I used whole wheat flour, added fresh green chili and did the ham substitution. I didn't have red bell pepper on hand but hope to next time. Too thick to roll up, so I cut it in half and stacked it and served it like a quiche. It was yummy and we'll cook it again! Note, it took about seven minutes longer to bake than recipe said.

Decided to try this as a new alternative to the usual brunch entrees. Great recipe. Made it just for my husband & I, but would definitely make it for guests.

The whole family loved it - even my picky eaters! I was looking for a quick and easy recipe for a busy night and this was great. Made it with bacon, onion, fresh spinach leaves and whole wheat flour. Looked as tasty as the picture. Will definitely make again...maybe italian next time w/ pepperoni, green peppers, onions, mushrooms, ital. cheeses...oh, the possibilities!

I made this and it was pretty good. I didn't roll it from the short end but rather the wide side; this made it easier to slice & wrap for freezing; I also added the salsa on top before freezing; now I have 8 breakfasts already prepared.

Mine was not as pretty as the picture. I found it difficult to roll up too. I made one long side with mushrooms, onions and peppers for the adults and made the other side with the bacon and some cubed ham for my 9-yr old son. We all loved it. It's now a new fav for brunch!
