I am dibetic and I made the bars sugar free. I also made it the last time without the raspberry jam. My son could not believe how good it was!! It is also so simple to make. I add a little more lemon zest.
This was very easy and very yummy. It received rave reviews from my family and coworkers. The lemon Jello seemed overwhelming at first but it mellows out as it rests.

WOW!!! My husband took 2 bites and told me this rates with his 2 favorite desserts: cream puffs and napoleons!!! my aunt made this for easter, it was delicious! its a keeper for my box!!!
I made this recipe for TWO Easter dinners at different homes and received rave reviews. One home had four other desserts and three of those four were not touched but they practically licked the platter this dessert was served on. No leftovers.
This was marvelous. I used light whipped topping and reduced fat vanilla wafers.
I made this recipe with light whipped cream, and low fat wafers. My husband said it was the best dessert I've ever made. I don't know why people rate this recipe poorly, if you follow the instructions you shouldn't have a problem. The texture and the flavor was great
I topped this with frozen raspberries since I couldn't find fresh in March at my local store. I made a cooked topping and sweetened it with some of the jam that went inside. Even sweetened, the raspberries were tart and when combined with the lemon the entire dessert was very tart. This is the first dessert my kids didn't like!
You can substitute low-fat sugar-free items if you are concerned about the calories. I have made one similar to this by putting a cookie in the bottom of a lined muffin tin, top with sugar-free pudding, then top with whipped cream, chopped fruit, nuts or coconut. Delicious, especially for a large group! You can use a lot of different flavors and toppings for this one. Great basic recipe. I hope you will try several different combinations to find one you really like. =^..^=
