this was really good. I used ground turkey instead of ground beef & used brown rice instead of white rice. Hubby really loved & has requested it again! Makes great leftovers also!

I made this recipe tonight and it took some tweaking. I browned the beed with onions and garlic and used 1 1/4 cup of rice instead of 2 cups. I also added a can of diced tomatoes. I loved the flavor but my three children (7, 5, and 2) didn't like it at all.

Smelled and tasted like stuffed peppers but a lot easier to make. Will enjoy many more times.

I made this last night and we really liked it! I used one red and one orange pepper, and also added some chopped onion. I will definitely make this again!

I make a very similar version of this casserole, but this recipe is missing onion. It's a must! I use about half a large onion, chopped. Just brown it along with the meat, green pepper and garlic. I also add basil and a bit of oregano. Super delicious!!

I always use the reduced fat Italian cheese, and other than adding a little grated parmesan/romano, with no other changes. One of my son's favorite meals, and so much easier than actually stuffing peppers!

Great recipe! I freeze lots of peppers in over the summer and this is a great way to use them up. Pair that with leftover rice from Chinese food and it's a super quick and convenient recipe.
