Undone Stuffed Pepper Casserole

This was AWESOME! My hubby doesn't care for bellpeppers, so I diced them up real small - he didn't even complain, and actually said this was the best "new dish" I made in a long time. Even my 3 yr old cleaned his plate clean!!! Will definitly make again and again!

Very yummy and easy to make. We did add onions though. How much dry rice makes 2 cups of cooked rice?

I recently took this to a covered dish luncheon and had several requests for the recipe. It was easy to make and the only changes I made was substituting onion for the garlic and simmering the peppers for awhile in the meat sauce since we like them well done.

Very easy & very good - though I did season the meat (used ground turkey) w/S&P, onion powder, garlic powder & some Italian seasoning.

We substituted ground turkey like another reviewer since we didn't have any ground beef and it was really good. Just make sure you season the meat really good. We used garlic powder, onion powder, salt,and pepper. Will def make again!

I substitued ground turkey instead of ground beef. To my surprise it was very easy to make and very delicious. Will be making this again.

This was absolutely delicious! It was so easy to throw together with basic ingredients, and gave the same fantastic taste as a stuffed pepper without all the work. We liked this so much that we've decided it will be our dinner contribution during our 15-person family vacation in June; it will be so easy to pre-prepare these dishes, freeze them, and then just pop them in the oven when we're ready. Such a great recipe!

Absolutely fabulous! I added a little onion to the meat when I browned it, but that is the only modification. Family loved it.

This recipe was really good and easy to make. My family liked it, I will definitely make this again. I think next time I may try the instant brown rice instead of the long grain, it takes nearly an hour to cook.
