Super simple and surprisingly good. Used Reduced Fat mayo and RF Ritz and added seasoning salt and pepper to the crackers.
This was really good. My son who is really picky loved this chicken and ate 2 pieces! I plan on making this again!
I was looking for a recipe the one day that i could make with out going shopping. I did not have much in the house and this is the recipe that i found. I did have to sub whole wheat saltines for the ritz and oregano for the parsley. I have made it my way a few times b/c my husband and i liked it so much. sometimes my breading does not like to stay on but i think that has to do with my putting too much mayo on the chicken, so that is something to be careful about.
my mom made this for us one night and it tasted blah b/c it had no salt. the next time she made it she added some salt and pepper and OMG! i loooooooooooooove it! it's so yummy! she makes one a little extra crispy for me just the way i like it :)
