Oh no, it is the coleslaw cabbage mix (shredded cabbage and carrots) that you use, not the completed coleslaw salad. Cabbage is great on mexican food, it is better that lettuce sometimes because it is more crisp.
Outstanding! My family LOVED it, including my 3 year old and 13 year old.
I agree that the coleslaw seems out of place in this Mexican recipe - I think I'm going to substitue Mexican rice and see how that turns out.
I thought the flavor of the cabbage (cole slaw mix) was a little out of place with the rest of the ingredients. I may play around with this recipe a little to get the flavors more in line with my tastes.
My husband and I disagreed about what "cole slaw blend" was - he bought prepared coleslaw. Since I was already committed to making this, I threw it in. I used less Ranch Dressing because it already looked pretty soupy. He loved it! The kid and I? Not so much. Was it supposed to be shredded cabbage and carrots WITHOUT the dressing?
