My wife surprised me with this wonderful refreshing salad on a hot summer night. WOW I could not stop eating it. Well Done!!!!!!!

I made this for a BBQ last weekend and it was a huge hit. Everyone complimented the unique and refreshing taste. Great salad will definitely make again.

This is great for summertime gatherings. I leave out the mint and add a 1/4 cup cashews. Everyone loves it.

Love, Love this salad! I used garlic red wine vinegar, olive oil and salt & pepper. And I don't always add the mint. Will make this many times in the future!

We LOVED it!!! In fact, I gave the recipe to a friend, and then was heartbroken when I couldn't find the reipe on line. I'm thrilled that I just found it again!!! So delicious!!!!! :D

WOW!! So unexpectedly wonderful. In fact, a local upscale restaurant serves this, in season, as the salad course. I've had rave reviews every time I serve this. I found a chocolate flavored vinegar at a nearby specialty market and the watermelon salad was wonderful with that flavor as well.

This is an interesting combination of flavors, but I didn't enjoy it as much as plain old refreshing watermelon on its own. In the end, I didn't think it was worth the effort. It's hard to improve on the perfection of a juicy summer watermelon.

Was really refreshing and had awesome flavor! Would definitely make again. I thought it would be really weird but it was surprisingly good!! My husband wants me to make this for a potluck at work next week =)
