Sun-Dried Tomato Chicken

What You Need

slices OSCAR MAYER Bacon, chopped

small boneless skinless chicken breast halves (1 lb.)

1/4

cup KRAFT Sun Dried Tomato Vinaigrette Dressing

tsp. dried basil leaves

tomatoes, chopped

Tbsp. KRAFT Grated Parmesan Cheese

Make It

COOK bacon in large skillet until crisp. Remove bacon from skillet with slotted spoon; drain on paper towels. Discard drippings from skillet.

ADD chicken to skillet; cook on medium-high heat 2 min. on each side or until browned on both sides. Pour dressing over chicken; sprinkle with basil. Cook on low heat 4 to 5 min. on each side or until done (165ºF).

TRANSFER chicken to platter, reserving dressing mixture in skillet; cover chicken to keep warm. Add tomatoes to skillet; stir. Cook on medium-high heat 3 min. or until heated through, stirring occasionally. Stir in bacon; spoon over chicken. Top with cheese.

Substitute

Substitute 1 Tbsp. chopped fresh basil for the dried basil; sprinkle over chicken just before serving.

Serving Suggestion

Serve with a crisp mixed green salad and your favorite steamed fresh vegetable to round out the meal.

This has become a family favorite and one of my boys doesn't even like tomatoes! I usually marinate the chicken in the dressing for at least 10 minutes, to overnight. It comes out great with canned, diced tomatoes. And when I'm in a hurry, I use real bacon bits instead of cooking bacon. It still tastes great.

I was pleasantly surprised by this! I LOVED this recipe. I subbed in turkey bacon and reduced fat parmesan cheese to knock out a few more calories and it tasted great! Definitely will make this again.

Made this last night and it was great! I added a can of diced tomatoes instead of fresh...and 6 slices of bacon ... perfect! I believe the canned tomatoes added more flavor than fresh. Served with brown rice and broccoli and salad. Yum!

My family and my boyfriend's family loved this recipe! Super easy to make, and has great flavor. The only thing I altered in the recipe is omitted the parmesan cheese, and instead of a tomato I used a 15 oz can of diced tomato. To make the recipe even easier you can get the diced tomatoes with basil and oregano already seasoned in them. Anyway you make this it tastes great!

Yum!! Everyone in my family loved it! So easy to make yet I did substitute proscuitto as that's what I had on hand and I did deglaze the pan with a little red wine. I served with white rice and steamed cauliflower but I think a green veggie like asparagus or green beans would be even better.

This recipe was DELICIOUS. I took some over to my elderly Dad, who is EXTREMLY PICKY and he loved it. Thanks for a great recipe.
