I made these for my kids as an April fools 'dessert', they thought it was funny. I piped the potatoes onto the meatloaf and sprinkled them with bacon bits. From a distance they looked like cupcakes. I used instant potatoes and left out the garlic and parsley. They were actually really delicious.

For a LOW CARB version, use crushed pork rinds in place of the stuffing mix. I don't even mess with the fancy potatoes. Instant mashed potatoes are great on top. These are a staple, regular or low carb.

1 lb. ground beef, 6 oz. low sodium stuffing plus 1 c. water, and Worchester sauce and A1 sauce to equal 2 T. I sprayed butter flavored PAM into a brownie not muffin pan. I used a 1/3 c. scoop which resulted in 11 mini meatloaves. I used my own mashed potato/spinach recipe. Cook at 20 mins. to reheat later.

These were AWESOME!!! Made for the whole family, and they all LOVED them. The only thing I did was use a little less garlic in the potatoes, but this was a HUGE hit in our house with my hubby and the kids!

These were awesome! I used hot water and added it to stuffing mix before mixing with meat. Didn't add garlic to the mashed potatoes but it was still so tasty!

Made this with half the low sodium Stove Top Stuffing instead of the whole package. Worked out very well. The is really good when it comes to portion control.

Yummy! I made them exactly to the recipe the first time and they were a hit. The second time, I made them with ground chicken and they were even better! This was a huge hit even with the family members that don't especially like meatloaf!

I didn't love these, but my kids liked that they were "meat cupcakes" So that was a winner. And they weren't bad, just not my favorite.
