So, here is the thing: These are delicious AND easy. Literally everyone who tries them raves about them, and it looks like I put a ton of effort into baking a delicious dessert. 20 minutes prep time? That's pushing it. If your oven heats faster than that, you can do this in 5 minutes.
Top with anything--Fruit. Caramel sauce. Pie filling. Chocolate chips in the batter. Oreo's instead of Nilla wafers for the crust. This is THE most versatile recipe.
I use vanilla instead of butter extract; I also use about 2/3 cup of sugar (the 1 cup seems to be a bit too sweet). And to make things easy, I use an ice cream scoop to put the batter into the cupcake pan.
