These turned out wonderfully. I used organic vanilla extract instead of the butter extract and added 1 tbsp. organic orange and lemon rind to add some flavor to the cheesecake. I also used gluten free vanilla sandwich cookies which made 18 cupcakes and used lemon filling with a little icing sugar to make it colourful and thick and topped it off with 1 fresh blackberry to put on the top.

I added a caramel kiss candy, toasted pecans, and crushed heath bar candies to the top instead of fruit after they came out of oven. These were delicious.

So, here is the thing: These are delicious AND easy. Literally everyone who tries them raves about them, and it looks like I put a ton of effort into baking a delicious dessert. 20 minutes prep time? That's pushing it. If your oven heats faster than that, you can do this in 5 minutes. Top with anything--Fruit. Caramel sauce. Pie filling. Chocolate chips in the batter. Oreo's instead of Nilla wafers for the crust. This is THE most versatile recipe. I use vanilla instead of butter extract; I also use about 2/3 cup of sugar (the 1 cup seems to be a bit too sweet). And to make things easy, I use an ice cream scoop to put the batter into the cupcake pan. Five stars; I'm making this for the rest of my life.

i made these cupcakes for mothers day and they were a big hit plan on making them again for my family memorial day cookout

i loved it, the kids loved it. Very easy to make i used vanilla extract instead of butter extract.

This recipe was easy to follow, took very little time to make, and was delicious. My husband and kids enjoyed it tremendously, and ask me to make it at least once a month!

I could eat these everyday! they were wonderful!!! I switched out the raspberries for strawberries!

Not only is this delicous,is it beautiful, try using designer cupcake liners. I love it.
