Banana Bread Minis

Nothing is better than a loaf of moist, flavorful banana bread…unless it's five of them. If you're feeling generous, you can even give a few of these adorable minis away.

What You Need

pkg. (2-layer size) yellow cake mix

pkg. (3.4 oz.) JELL-O Banana Cream Flavor Instant Pudding

eggs

cup water

1/4

cup oil

cup mashed fully ripe bananas (about 3)

1/2

cup chopped PLANTERS Walnuts

Make It

HEAT oven to 350ºF.

BEAT first 5 ingredients in large bowl with mixer 2 min. or until well blended. Add bananas and nuts; mix just until blended.

POUR into 5 foil mini loaf pans sprayed with cooking spray.

BAKE 40 min. or until toothpick inserted in centers comes out clean. Cool completely.

How to Store Ripe Bananas

Have too many ripe bananas? Mash bananas, then store 1-cup portions in separate resealable freezer bags. Freeze up to 3 months. Thaw in refrigerator before using to prepare these delicious banana breads.

How to Store

Bake a batch to share! These mini loaves will keep three days at room temp or three months in the freezer.

My family loved this. After trying this one I made one using a chocolate cake and bananas, and substituted mini chocolate chips for the nuts. They thought that was the best bread they ever ate!

Easy to make. Very moist and tasty. I made these one night and the next day my husband said, "That banana bread is good." I saw that he had already eaten one and a half of them!!

Best Banana Bread I have ever had. So moist and delicious. I made in a full size pan and had to cook a little longer. Delicious!

This is such a great and easy recipe. I accidently bought duncan hines with pudding in it and the bread is keeping super moist even after 3 days!

I had problems with the Minis staying together. After cooling I took them out of the tins and most of them fell apart. Is there something I can add to keep them more intact. Please advise, thanks a bunch.

Excellent, my bananas were 'just ripe' not fully ripe, added 1/4 tsp vanilla. We really enjoyed this recipe.

Very easy to make and really delicious. I used sugar free instant vanilla pudding. Cake was moist and had great flavor. I will be using this bread as part of my Christmas basket for friends.

This was one of the best banana bread recipes I have ever tasted! It's so easy to make. I made banan bread from scratch two weeks before making this one, and this recipe outdid the from scratch recipe by far. Will definitely be making this again!
