This was delicious! I added diced tomatoes and canned corn, I also used low carb tortillas. The family didn't even notice, everyone loved it.
This recipe was pretty simple to make and very good. I used chili beans, and added a can of diced tomatoes and half a can of corn. It makes quite a bit, so it's not a very good dish for a single person unless you're ok with leftovers.
I have made this dish twice and each time my family loved it. The second time I did not have pinto beans so I substituted with Southern Ranch beans and topped each tortilla with sour cream. It was awesome!
