This was wonderful! I did add a few things though. I like more tomato, so I added a can of diced seasoned tomatoes. Also I added another can of small red beans along with the white. Also I added a pinch of garlic salt, pepper, oregano, parsley and cayenne for a little kick. I also added a little more chicken. My family loved it!

I like a heartier soup so I added a little extra of the beans, corn, green onion, chicken, and corn. It turned out amazing. SO FLAVORFUL! Nice addition to any cold day.

Very easy to make and so delicious!!! Served it with cheese quesadillas and a salad. Next time will add more chicken stock as it is a chunky soup.

This recipe had a lot of promise, but did lack a little in flavor. I increased the amount of cumin a small amount since several people suggested that, but I should have done it even more and will next time. And it definitely needed the crumbled tortilla chips on top - yum!

This soup was AMAZING! Honestly, my new favorite soup. It was very easy to make, had most of the ingredients on-hand, and perfect for a snowy, winter day inside. I also added crushed tortilla chips on top, which made it just that much better. Will make again...and soon!

Excellent soup. Quick to make and the whole family loved it. Easy to adjust the spiciness of the soup using your favorite salsa. The kids loved crumbling tortilla chips into it instead of using crackers.

My hubby and I loved this! We didn't find the cannellini beans so we used chick peas and it was great and easy to make!

We live in Texas and this is one of the best Mexican chicken soups. I used a whole rotisserie chicken and added small can diced green chiles and 2 tsp cummin and 2 tsp chile powder. Excellent!
