Love this recipe! I add 1 package of taco seasoning too, to add a bit more kick to the dish. If you can't find the Sante Fe cooking creme, you can always use a block of cream cheese, taco seasoning and a few drops of hot sauce. Yumm!

Made these last night and they were super good! It's just my husband and I and we were able to get about 10 enchiladas out of it...enough for dinner for 2 nights!

My family loved these!! Will make again, IF I can find the SanteFe Sauce---have not been able to find in last 45 days!! Sure hope it hasn't been discontinued.

quick and easy, love that part. But the recommended oven temp of 350 didn't even make them HOT. More like luke warm and that didn't sit well with me. Will definitely beef this up with Rotel instead of regular diced tomatoes next time. And will increase the oven temp to about 375. **brand new oven**
