Easy Lemon-Chicken Piccata

What You Need

large lemons, divided

small boneless skinless chicken breast halves (1 lb.)

cup KRAFT Mayo with Olive Oil Reduced Fat Mayonnaise

RITZ Crackers, finely crushed (about 1 cup)

Tbsp. olive oil

tsp. chopped fresh parsley

1/2

cup chicken broth

Tbsp. butter

Tbsp. capers

Make It

step 1

CUT 4 thin lemon slices from half of 1 lemon; squeeze juice from remaining lemons. Coat chicken with mayo, then cracker crumbs.

step 2

HEAT oil in large skillet on medium-high heat. Add chicken; cook 5 min. Turn; cook on medium heat 5 min. or until chicken is golden brown on both sides and done (165ºF). Transfer chicken to platter; sprinkle with parsley. Cover to keep warm. Carefully wipe any crumbs from skillet with paper towel.

ADD lemon juice and broth to skillet; cook on medium-high heat 6 to 8 min. or until slightly reduced, stirring occasionally. Add butter, lemon slices and capers; cook and stir on low heat 3 to 4 min. or until butter is melted and lemons are heated through. Serve over chicken.

Note

You should get about 3/4 cup juice from 2-1/2 lemons.

Made this recipe tonight and it was delicious!! I almost passed it up because I thought it looked complicated. Glad i didn't! Liked the suggestion to use italian bread crumbs instead of ritz to cut fat. I will definitely be making this again!!

It was an easy recipe but my family thought it had way too much of a lemony taste. Couldn't taste the chicken at all because of that.

Very very good! This is a good twist on the basic lemon chicken. I will definitely add this to my repertoire.

DELISH!!!!! I added more lemon juice, butter, and broth because I served it over angel hair pasta! Fantastic receipe!! Easy!!

Very tasty, my whole family loved this. I would give 5 stars for flavor, but 4 stars because it was trickier to make than it sounded. Be careful when browning the chicken, I also burned the first set I cooked. I pounded them thin and they were burning before they cooked through. Would recommend a quick browning then turn heat down and cover to cook. Enjoy!!

very good, very easy. Used Lemon Pepper Panko crumbs. With nice salad & bread, a great "for company" recipe
