An absolutely fabulous dish. Reminiscent of a Mexican smothered chicken. Out of pure laziness, I left the bones in the chicken thighs but did remove the skin. Definitely serve on top of brown rice rather than having rice on the side. Will be making regularly.

I served this with rice but this would be also good served over nachos.

I made this recipe tonight and my family loved it and would like to have it again. I served it over white rice and put a spoonful of sour cream on top. I left out the corn and onions since no one likes them.

This turned out great. Everyone in my family loved it. I made it with white rice. Next time I will eat it with pita pocket bread. It will go great together.

This was easy and good. I am going to make it with Chicken breast next time, my boys are not fans of thigh meat. It was better served over the rice then on the side.

Excellent for a busy day. Made it in the afternoon and baked when I got home from work. Instead of rice made a salad and topped it with the bake. Super yummy and super easy on a busy night.

I added more seasoning (used my own). Added fresh cilantro to the dish before putting in the oven. My family does not like rice so we used this as a topping for nachos. Very good!
