Very tasty dish. I made mine in a 2 qt casserole dish, so I didn't have the problem of not enough cornbread. That worked well for my family since they preferred more meat to cornbread. I did sprinkle a little taco seasoning into my meat while cooking as others suggested. I also used a small can of green chilies since I didn't have a jalapeno. Delicious!

This was awesome! Even my kids and husband liked it (gasp)! I did doctor it, though - extra spices (taco seasoning, like a whole envelope) plus two boxes of Jiffy. I thought two boxes of Jiffy overpowered everything else, but the reviews that said one wasn't enough to cover the pan made sense...maybe next time I'll make two, but only use enough to cover the pan. And I layered the cheese between the meat & cornbread (out of laziness, really) and it was great. Had a great flavor (with the doctoring)!

I doubled the cornbread - 1 box is def not enough to cover a 13x9 pan. For flavor I added 2 Tbsp of taco seasoning to the meat mixture (in addition to the jalepeno) - turned out delicious! The only reason it didn't get 5 stars is because the cornbread doesn't cook all the way - I guess because of the cheese? Next time I would probably not mix the cheese in the cornbread mix but would wait until the last 5 minutes of baking and put it on the top and just let it melt.

Kids loved this. Next time I will amp up the nutrition and add more veggies.....red & green pepper and perhaps, some corn.

I personally did not care for this recipe. I added a lot od extra spice(salt, pepper,garlic, onion powder) and still it felt like something was missing.I also would use two boxes of cormbread mix. One was nowhere near enough. That was the only part of the dish I liked. I won't make this again.

I really enjoyed this recipe. It's easy to make, very tasty, and allows for leftovers (I live alone). I made the enchilada sauce from a packet (substituted tomato sauce for tomato paste and reduced the water to make the sauce), and used 2 Tbsp. of salsa verde instead of the jalapeno. I would use 2 packages of corn muffin mix since it didn't completely cover the meat mixture using just one (in my 13 X 9 pan anyway). I also added 1 Tsp. of chili powder. Yummy!

This was great! I added a 20oz can of enchilada sauce instead and mixed in some canned chipotle into the cornbread mix for an added kick. I will making this again really soon

I made the recipe according to directions and the cornbread did not rise. I thought I would make another batch of cornbread thinking it might have been the mix, but it did the same thing again. It was very disappointing and a waste of good ingredients.
