This was WONDERFUL!! I used 3 cooked chicken breasts and 2 cans of Rotel which added a lot more flavor but was NOT that spicy instead of diced tomatoes and 2 pkgs of cheese. Also, I mixed one package of cheese in the pasta mixture and used one package of cheese for the topping.

Made this for dinner yesterday, and can't wait to eat the left overs. After reading the reviews, I made a few changes. I used about 3 1/2 cups of shells, which was perfect. I also used 2 cans of diced tomatoes, one with the diced chiles in it. I also added a 8 oz can of tomatoe sauce. The husband isn't fond of chicken, so I used ground round, which I browned with the yellow onion and red pepper. We also don't like black beans, so I used 1 cup of light red kidney beans. The presentation was beautiful, and we both loved it. will definetly make this dish again
Made this recipe with ingredients as listed..with one exception. Had to have more cheese! I used 2 cups -- and it was a winner all the way around! Will surely make this again...maybe add ripe olives next time. Great meal for families with kids!
Pretty good! I especially liked that it was not "soupy" in the least. Makes enough to feed a small army.
I made this last night and brought left overs for my co-workers and they loved it too.
I made this last night and took the suggestion to add one more can of diced tomatoes. It was fantastic! Just the right amount of spices and flavoring. My son and his friends finished off the pan last night. Definately will make again very soon.
very tasty, I used tomatoes with chilies and a can on enchilada sauce, and added a can of corn. Next time i will add a can of black olives i think. It's an easy recipe to tweak to each families taste/liking... nice combination of flavors

This had so much flavor. I was truly amazed because there is not much sauce to it. Next time I am going to use 2 cans of tomatoes, because the one just evaporated. But this was still very really does taste like enchiladas!
