We made this without the parmesan, and it was very good. It was a great way to use up some of the veggies we had on hand. The trick is to cut the veggies in thin slices/small pieces so that they will cook in similar amounts of time.

I have become addicted to this! I shop at the farmer's market every weekend and have made this the past two weekends. It is perfect as is. However, to coordinate with the meal I was preparing, the second time I made it, I added some garlic with the onion/pepper and at the end, added basil instead of parsley. It was awesome!

We made this recipe with fresh local ingredients and it was delicious! We also made it a second time and added warm mini penne pasta before adding the cheese and it was great too!

It needed a little salt, but was delicious. I'd like to try it as a cold salad over pasta.

I made this with Yellow Summer Squash instead of Zucchini. It was FANTASTIC! The freshness of the corn meshed in with the peppers, onions and squash and the parmesan cheese was amazingly good! Thank you!
