Cheesy Hash Brown Casserole

Cheesy Hash Brown Casserole recipe
Hash browns aren't just for breakfast anymore. You'll want to serve this cheesy, bacon-y, oven-baked version whenever and wherever. It's a smart choice that only tastes rich.

My issue with this recipe is not taste, as I have a similiar recipe for hash brown cassarole which is scrumptious, but it's labeled "healthy living". There is no way that this is good for you as a main dish. Let's not kid ourselves. Potatoes, cheese, sour cream and condensed soup are still bad for you even if you use the reduced fat kind. The serving size for this is 1/2 a cup. That is a very small amount, please keep that in mind if you plan to make this.

Use shredded Potatoes O Brien instead of messing with the onion and pepper....Delicious :)

This recipe is delicious, I subbed canadian bacon for bacon. I even made it once in the crock pot for a pot luck at work.

One of the best recipes for a potato casserole I've tasted. It was a huge success in my family.

Very easy. Tasted good, but I was expecting it to be cheesier. I'd say it was more creamy than cheesy. I'll make it again though.

I made it with cream of broccoli soup, green peppers, and cheddar and I loved it even more!

It's great!! I also added chicken & a bit more soup to it for an all-in-one meal! Really good!

I replaced the bacon in the recipe with mushrooms, but I don't think that's what caused it to be subpar. The creaminess of the cheeses, sour cream and soup was just too much. The casserole was "broken" and chunky. The overall texture was clumpy and unappealing. If you do make it, be sure to add some spices (I did salt/pepper/garlic/chives) because it's very bland without anything.

Since I am not a big fan of Cream of Mushroom soup, I used Cream of Chicken soup instead. The flavor was fantastic. Next time I will try Cream of Celery or Cream of Asparagus soup for a different twist.
