This is a fantastic recipe!! Even my husband who doesn't like meatloaf asks for seconds and wants to know when we're having it again. Have shared it with so many. Can't stop raving about this simple dish that literally stretches only 1 lb. ground beet into 7 mini meatloaves! Perfect for vacuum seal and freeze for easy, easy weeknight comfort food!

Yum! I didn't have BBQ sauce so I substituted ketchup, brown sugar, grape jelly [home made version of BBQ sauce] and a hint of mustard. It still turned out great!

They were so easy and yummy. I doubled the recipe and froze some. The second time I made them after they came out of the oven I put them in a hot frying pan for a couple of minutes. We like the bacon a little crispier. My family loved this recipe.

Very Good. The bacon wasn't so crisp. I spread bbq sauce on the top at the end, and then I put it under the broiler for an extra 5 minutes, trying to crisp the bacon up. I didn't add onions, it still turned out good.

Sounds like an excellent recipe, except I would change one thing: Bake it first, then freeze. I was taught to never freeze food with raw eggs in it.

My family gave this mini meat loaf 5+ stars and said do not lose the recipe mom you have to make it again. It is easy to make and I may use 2 full pounds of meat next time it had a bit much stufing in it. How ever I see it as a awsome option for make a head meals and meals for where there is only one person or two. where you want a full meal but do not want a lot of left overs sitting around.You have got to try this!

We loved these, but they never made it to the freezer! Will certainly make again, maybe using tomato sauce and Italian seasoning, or...so many combinations possible.
