Very refreshing meal! I made a slight alfredo like sauce to go on it so that it wasn't dry. About a 1/2 stick of butter, 1 tsp of minced garlic, 1 cup of half & half, 1/4 cup of parmesan cheese, 2 tbsp cream cheese & some of the Italian blend cheese. It was a total success! The hubby liked it and we will be adding it to the rotataion.

I made this recipes for my two boys and my guy and they loved it! :) I did however use only 2 yellow squash and 2 zucchini and substituted the pasta water for chicken broth and added a bit of Alfredo sauce to it and it was a smash hit! I'm definitely putting this in my cookbook and making it again. :) it was delicious and healthy!!

I made enough changes that I can't truly rate, but it was wonderful the way I made it. Thank you for the basis of a yummy meal.

I made quite a few modifications but it was a hit! I added bite size fresh aspargus, 1 sliced mini red and yellow sweet peppers, 1/2 finely diced jalapeno pepper. I also used chicken broth in place of the pasta water and used whole wheat pasta. I grilled the chicken breat strips and shrimp that I had marinated. I think for a little more kick I may add red pepper flake or the whole jalapeno. Yummm!

I thought it lacked color, so I added red onions and a red bell pepper. Remembering to salt my pasta water will help the next time around, too.
