Super Duper-Get creative with it. I used Sun dried tomatoes packed in oil...drained & absorb oil on paper towel. 2nd time, I cut the "red" veggie in half and added 1 cup cooked ground Italian sausage. Process or blend cooked sausage until mealy. Blend ALL ingredients together and spread at one time. It's faster and easier to roll. This went over big.

These were deliscious! I prepared them as an appetizer to share with a large group and even the kids gobbled them up. The recipe is simple and they make an elegant presentation on the serving platter. I cut my red pepper into thin strips instead of dicing it and I sprinkled a bit of parsley on the tops for color along with the parmesan. I look forward to making them again for New Years Eve!

I made 3 batches of these for Thanksgiving appetizers, 1 batch with the roasted red peppers, one with Bacon crumbles, and one with chopped black olives and minced red onion. We all had so much fun eating these and the other pre-feast munchies, I probably could've skipped the turkey! They really are simple and delicious. I like to get creative with the filling, just keep the cheeses the same.

Really nice recipe for holidays and celebrations to be served as appitizer!! i made it as the recipe goes but roasted red peppers would be a great substitute.

So quick and easy!! I did substitute roasted red peppers and it was delicious. Make sure to drain peppers well, though. These bites are good for any occasion whether it be movie night or a dinner party.
