Southwestern Chicken and Rice

Southwestern Chicken and Rice recipe
This is such a quick meal! We like a little kick in our food so we buy medium or even hot salsa. We also have tried it with red beans and kidney beans. So great!

Fabulous!! Great with spicy salsa and perfect with sourcream suggestion. This would be fabulous even without chicken. love love loved it!!

I made this recipe with spicy salsa and taco seasoning. I served it burrito style, adding shredded cheese, shredded lettuce and sour cream. The only thing I will change next time is the amount of rice. It seemed to be a bit too much, but overall, it was a hit!

Pretty good. I followed the advice of some other reviewers and used taco seasoning on the chicken (according to directions on seasoning pkg), and I used kidney beans in chili sauce (drained but not rinsed). Lotsa good flavor, ate with tortilla chips. We felt like it would be good wrapped in tortilla shells, that's how I'm making it next time.

This was very good! Needed to add more liquid because the rice didn't cook the first time, but once we did that it cooked right up and was very good. Ate it with chips and wrapped it up in tortilla shells and just ate with a fork. Very good!

I make this recipe atleast once a week. I kept changing it just a little until I found the exact recipe that worked for us...using hotter salsa, adding some spices to the chicken while it was cooking, etc. My husband loves it too, and he's hard to cook for.

I really liked this dish. The next day I put the chicken over salad with the salsa and sour cream and made a good mexican salad.
