Southwestern Chicken and Rice

Southwestern Chicken and Rice recipe

This is such a quick meal! We like a little kick in our food so we buy medium or even hot salsa. We also have tried it with red beans and kidney beans. So great!

My familyt loves this recipe but I add taco seasoning and use black beans. I top with mexican cheese and serve with chips and sour cream. Even my 3 year old asks for more.

This is sure to become a family staple at my house! I used a hot instead of mild salsa and added sour cream. I also tossed in a chopped red pepper for color. My family requests it almost every week now!

This recipe was good. Bland, MUST have sour cream (not so healthy then), could use a little more spice. Maybe try a hotter salsa. I found it boring, my family said it was ok, not for a regular dish but every once in a while.

This was pretty good. Quick and easy to make. Would be amazing with a lil sour cream, but I didn't have any on hand. But I think thats what it needs.

I used brown rice instead of white and black beans instead of kidney...it was really good and the whole family enjoyed it!

I liked this recipe very much. I switched Black Beans for the Kidney Beans, and I'm using the leftovers to make enchiladas tomorrow!
