I have never made eggplant before, and was quite surprised how well this turned out. Even my husband liked it, and he usually doesn't like all veggie dishes. I did sprinkle a little garlic on it after it was done.

I personally love eggplant parmesan but the family did not like this. I cut the eggplant too thick for their taste. I substituted zucchini for the mushrooms. I would make this again but it would have to be just for me.

I first used the fat eggplant and it turned out great. The next time I used Italian eggplant and either it wasn't ripe enough or not the right type of eggplant.

This one has already gone on our "hot list" for once a week! It's easy (very important for a cook with a short attention span like me!?) and tastes like something I'd order in a restaurant...

I LIKED HOW EASY IT WAS TO MAKE AND IT WAS VERY TASTEY ALTHOUGH I USED EGG AND BREAD CRUMBS ON THE EGG PLANT FIRST AND FRIED IT TILL BROWN,MY HUSBAND LIKED IT AND HE USUALLY WON'T EAT VEGGIES.GREAT WAY TO MORE VEGGIES IN OUR DIET AND I SERVED IT ALSO WITH A SALAD.THANKS

I thought this was a fast and easy recipe. I used three cheese tomato sauce to give it extra flavor. It turned out to be really good!!! I will definately be making this more often.
