This is my 2nd time making this. My husband and I eat a lot of chicken so this is a great change of pace. A large salad completes this meal.

Better when I breaded and fried the eggplant; plus added layers of a ricotta, parmesan, chopped fresh spinach mixture

I think that breading the eggplant and frying it first is a better way to cook this recipe. It gives it a bit more flavor. There is also a lot of mushrooms in this recipe so if you aren't a huge fan of them, maybe cut it in half.

what I changed was I placed the sliced eggplant in egg and then bread crumb fried it just till browned on both sides then layered with cheese and sauce but omitted the mushrooms the family loved it and it was tender

Being single I cut the recipe in half for the second time I made it. I put in sauted baby portebella mushrooms instead of the sliced. The eggplant was so tender. This recipe is delicious. I had quite a bit left and it will go wonderful on top of spaghetti. Thanks

you need to soak the eggplant before you make it or cook it longer because it was too tough, i had to cut it with a knife to eat it when it should have been moist and soft.

I made this recipie once before. To my surprise, my finicky daughter who won't eat eggplant has now requested that I make it again. That is the ultimate compliment!

I thought this recipe was okay, but my son (who is picky) was in tears over it. I wouldn't recommend this for a picky eater.

I added turkey italian sausage to it. Which comes seasoned and diced tomatoes w/chile for that extra zeal. My teenager loved it, as well as some friends who are afraid to step out of the box. I recommend it highly.
