This is wonderful and fairly healthy! My husband requested this dish for Valentines Dinner so I turned to Kraft to find the Perfect receipe and Voila!! They come through again. Recommend this Dish

I left the skin on and lightly breaded the eggplant, but did not saute it seperately. Be sure to use fresh eggplant, smaller is better, the larger ones are more likely to be bitter.

Leave the peel on -- just be sure to slice the eggplant thin. This is a much improved recipe over the standard breaded version. I used two thin-sliced Boca Italian (soy) Sausages and added them on top of the mushrooms. I left off the mozzarella but did use the parmesean as listed. My family loved it!

its better to peel the eggplant before slicing it. then dip each piece in flour, then eggwash, then seasoned bread crumbs. souate them lighty until golden brown then follow recipe as is !

Next time i will take the skin off. I also used less cheese.

My husband hadn't even heard of eggplant until I made this recipe. He was very skepkical of a main dish with no meat in it. But after the first bite, he was hooked. Now he requests it!

My neighbor made this recipe and gave me some. I had tried Eggplant Parmesan before and didn't like it. But was given some again to try and found it to be very good. I would make this since I have found it to be quite tastey. Also would recommend this for a meal in itself, or even as a nice side dish.

I can't decide if I like this recipe or not. It was really cheesey, which is good, and I used a great spaghetti sauce. This was my first experience with eggplant, I'm not sure if I'll try it again. It was just a bit bland.
