I am a true beginner when it comes to cooking, but with some assistance from my wife and daughter I was able to make this truly great dish. My boys (who are not the most adventurous eaters even liked it. Thanks Kraft you made me look good once again.

This recipe while basically very good, could benefit by adding additional sauteed peppers, onion,and lightly sauteeing the mushrooms in just a little olive oil . These ingredients could be added to the spaghetti sauce before layering.

With this change: to keep it low fat, slice the eggplant a little thicker, tehn let it soften by keeping it on a baking sheet in 350 over about 10 mins. each side.

It was easy to make and I finally have a solution for all these eggplant from our garden!

Made with modification: added more cheese and breaded,fried eggplant as a preliminary step.

Like the idea of mushrooms, but eggplant may be soggy

I would lightly bread and fry the eggplant slices first before completing the recipe.
