Mine came out very watery and needed salt/seasonings. My husband thought it needed some sausage but my whole point of making this was for a meatless meal! I'll try it again with a few changes next time.

Very tasty dish! I substituted fresh spinach for mushrooms since I had none. I added onion and garlic powder to the sauce because I use low sodium sauce. I also used fat free mozzarella cheese. Delicious!

Will cut the eggplant into smaller pieces next time instead of leaving them round and add a little garlic. Pretty good overall.

Really simple to make and the whole family enjoyed it. I added extra mushrooms to the dish and used extra chunky vegetable spaghetti sauce to add some extra veggies to the dish.

My roommate and I made this recipe and it was EXCELLENT! It was very easy and we will definitely be making it again sometime.

I decided to try to cook healthier dishes with fresh veggies. If you like eggplant than you will probably like this recipe. I NOW know that my family does not like eggplant. The dish had a "squash or Cucumber" taste to it. Not sure if that is normal for eggplant or not. Give it try - you'll never know until you try it. I tried it and now I know not to make it again.

This a great recipe for diabetics. I cut into the 6 portions and freeze the remaining 5 portions for future meals. It is really a good way to prepare eggplant. I used more mushrooms and cheese, because I love both.
