After I cut up the eggplant, I first placed it on my broiler and brushed it with olive oil, then broiled it for several minutes, then did the same on the other side. I also used a larger sized jar of sauce. When finished, I served it with whole grain thin spaghetti. Delicious!!

This recipe is very simple yet very yummy!! This is my first time ever eating or cooking with eggplant. I dipped the eggplant in eggwash and flour and browned first.......I highly recommend this recipe......Five Stars!!

Texture was too soggy. If I made something like this again, I think I would brown the eggplant first in some olive oil.
