Easy Lemon Cake

Remember the last time you used just four ingredients to deliver a spectacular dessert? We didn't think so. Wow 'em tonight with a showstopper that's almost too easy.

What You Need

pkg. (2-layer size) lemon cake mix

pkg. (3.4 oz. each) JELL-O Lemon Flavor Instant Pudding

1-1/2

cups cold milk

tub (8 oz.) COOL WHIP Whipped Topping, thawed

Make It

step 1

PREPARE cake batter and bake as directed on package for 2 (8- or 9-inch) round cake layers. Cool in pans 10 min. Remove to wire racks; cool completely.

step 2

BEAT pudding mixes and milk with whisk 2 min. Immediately spread over tops of cakes.

step 3

STACK cake layers. Frost with COOL WHIP.

Variation

Bake cake in 13x9-inch pan; cool. Do not remove from pan. Spread cake with pudding mixture, then COOL WHIP.

This was a huge hit in our house. Perfect mix of flavors. I would like to experiment with other cake/pudding flavor variations for fun.

I made it for a birthday dinner at work. Everyone loved it, and it was simple to make. It was so creamy and really hit the spot. Especially with it being May. It's light, and satisfying on a hot day.

I've made this cake three times and it is always perfect and a hit each time I make it. The one suggestion I have is to use 3 boxes of pudding because two never seems to be enough for me!

didn't make this cake, looks good. just wanted to say, to make a REALLY good, moist, and flavorful cake, take lemon cake mix, add one can of diet sprite and bake according to box directions. don't add eggs, oil or anything else. just spay pan or muffin tin with nonstick spray. bake and enjoy!

Lemon flavor was pretty bland. I made this with lemon frosting on the top and sides instead of cool whip and that was the only thing that saved the cake from being terribly plain in terms of tastes.

I made this for Mother's Day 2006 and once she tried it, my mom even called the neighbor to come over and have some.
