This is such an EASY dessert! I made it as the recipe described and everyone who tried it wanted the recipe. It is so light and refreshing, not a heavy dessert, and perfect for a backyard party! I have since experimented (as has my MIL) with different flavored puddings and cake mixes. Cherry Chip cake with vanilla pudding was a huge hit with my husband. I have also tried: Vanilla cake with white chocolate pudding decorated with strawberries and white cake with chocolate pudding. At 88 cents a box on sale you can try LOTS of different flavored cake mixes!

I made this for my dad's birthday because he loves anything with lemons. It was wonderful! I was worried we would have too much cake left over but it was all gone. I made a 4-layer cake and had the lemon pudding layered twice. I used rapsberry jam and cool-whip between the other layers.

I made this for my mother (for mother's day). Everyone loved it. She had 2 servings in a row! My sister liked it so well, she insisted I make it for her birthday cake. I sprinkled toasted coconut on top for color and flavor.

I made this cake for my husbands birthday. I rarely get rave reviews from him although he does say that I am a good cook. Usually his comments are it was pretty good or it was okay. This time he said, "now that's cake!" And he proptly asked for a second helping! He usually prefers a boughten cake over homemade because they are moister. This is the moistest most delectable cake I have ever made and can't wait for a chance to make it again. I may even try it with chocolate cake and chocolate pudding. EXCELLENT!!!!

I liked the idea and it seemed so simple. But the pudding I used just didn't do what it was supposed to and the cake looked nothing like the picture. I don't know what went wrong but it was not as easy as I thought.
