I made it for a road trip and it was awesome...easy to put together and some of my friends wanted me to make more for their upcoming events. It's one of my favorite meals now and my kids even love it.

Because I am not a fan of broccoli, I used cauliflower and I love it.

Really easy to make pasta salad with very pretty colours too! Excellent for a hot summer and my son gets the carbs and fibre, I just had to serve it with a protein dish.

This salad is colorful and great tasting. The only thing I changed is that I used shredded parmesan in place of the grated

Thanks for the tip on blanching the broccoli. I had never done that and it does make a difference. I also add tuna, or crab for a complete meal.
