My 4 yr old loved it and I did too. I halved everything except the eggplant and used a 9x9 pan. Made some garlic bread with whole wheat bread and it was a great meal.
I used twice the amount of eggpland and also used zucchini, yellow squash, and green pepper. I like more veggies, I did not try it the way the recipe says so it might taste good that way too.
Loved this recipe. I'm making it for the second time tomorrow. I added mushrooms and used the noodles that don't need to be cooked ahead of time. That saved a lot of time. Very good. My mom requested this dish!
Very good and easy. I also added spinich and ground turkey. Will make again
I used Paul Newman's Sockaroni spaghetti sauce to add to the eggplant. When spreading the sauce mixture over the cheese mixture, I also layered some of Paul Newman's Tomato & Basil spaghetti sauce. I also mixed 30 oz. of part skim ricotta with 1/2 c. parmesan and 3/4 c. mozzarella. I used my glass rectangular dish (larger than 9x13) and made 3 layers of noodles. Also used whole wheat lasagne noodles and 4 links (removed from casings) Italian turkey sausage cooked thoroughly and added to the sauce mixture. Use 1/2 c. chopped onion. My husband said this was the best lasagne I have ever made!!! 10/25/2009
It took me two hours to make and was completely flavorless. We had to end up salting the end product which was no good :( ADD SALT and maybe cayenne seasoning.
The only thing I did differently was to add some meat to the sauce. The eggplant flavor was horrible; we ended up picking it all out in an attempt to salvage the rest of the dish.
WOW! This is the p-e-r-f-e-c-t italian recipe! The eggplant mixed with the minced garlic, onions, and spaghetti sauce is lip smacking in itself! The end product is amazing!
great recipe! prep time takes a little bit longer because you do have to cook the noodles, but it is well worth it. Next time i will probable add more veggies, but the consistancy was perfect and it tasted great!
Its good. Need to add more eggplant.
