I changed it. Used fat free evaporated milk, fat free cheddar, low fat velveeta, Smart Balance for the butter, veggie pasta and skipped the crackers. Don't know what that adds up to in fat and calories but the evaporated milk makes it extra num and not guilty!

I am not a big velveeta fan, but I tried this, the kids ate it up, but I like my homemade mac and cheese better. It was a little bland for my taste.

My whole family loved the mac and cheese the only thing I did not like was the crackers mixed with butter next time that I make it I would just leave the crackers crushed by them selves.

I've made this with Velveeta and with American cheese. For my family, it was four stars with Velveeta and an enthusiastic 5 stars with American. My 8 year-old at the leftovers the next day, and she never eats leftovers!

Made this last night and added 1 lb. of hamburger. Turned out great. Husband, grandson and daughter in law all loved it. Husband says: "definitely make again." Do need to stir almost constantly to prevent sauce from burning or sticking to pan.

We absolutely loved this recipe. Instead of Velveeta I used 8 oz. of Kraft 2% shredded cheddar, and i added a half cup of shredded mozzerella. It was delicious.
