This is the easiest potato salad recipe I've ever used. The microwave really makes the recipe easier and faster. I'm not waiting until a spring or summer holiday to make it again.

I added fresh chopped cilantro and garlic powder, cayenne pepper, and salt to taste. Absolutely delicious! It would also be good mashed up a little more and served hot.

I would make this again. BUT I didn't like it the first time I made it. Next time I will add more Mayo and Dijon mustard. It tasted a little bland. I also will serve it hot. The bacon is not very good cold.

I made this recipe for my family and a pot luck and everybody enjoyed it. I did make a change the musdard to a deli musdard and added more to it.
