This dish was made and brought to our house by my son's girlfriend and it was a huge hit!! My younger son doesn't even like tomatoes and he almost ate all of it by himself. I will definitely be making this recipe. Thanks Staci!!!

Fabulous! Very simple to make and I have requests for them all the time. Great for a appetizer or a light meal.

I really enjoyed this. I turned it into a light supper by serving a few peices with a salad. I look forward to serving it as an appetizer at parties. It was a great use for the overwhelming amount of tomatoes and basil in my garden.

This was so easy and very tasty! I also used roma tomatoes instead of a regular tomato and fresh grated parmesan. My husband and I made a meal of it, but it would be great for entertaining.

This is a good "starting point" for bruschetta. I prefer to use 3 Roma tomatoes instead of one large tomato, I find the Roma tomatoes to be meatier. Also, rather than put the minced garlic in the bruschetta, I toast the bread and then rub the garlic clove over one side of the bread before heaping on the bruschetta. And be adventurous with the cheese...try mozzerella or fresh grated parmesan..how about Feta cheese. One last thing, I sometimes add Balsamic vinegar for an added zip.

I've made this several times and it's always a big hit. It has a trendy, gourmet appeal, but it's so easy to make. I toast the bread and blend the toppings ahead of time, then warm the bruscetta in the oven before serving. It's a little messy; kids may find it hard to handle.
