I made this cake years ago but with a little orange juice. I have since lost the recipe. However for those of you who have been around as long as I have, you can still find Dream Whip. Use one envelope and one 4 serving size box of pistachio pudding and one and a half cups of milk to make the frosting. For those with diabetes, they make sugar free pudding and cake mixes.

I just made this cake today. I haven't thought of this cake in years and searched for it to make for St. Patrick's Day. So happy I found it. It was just as yummy as it was years ago. My daughter and I had a piece right out of the oven...sooo good!!

I have been making this cake for 20+ years, usually on St. Patrick's Day. I just love it . It has the best flavor. I make it in a 9x13 cake pan.

This recipe was my moms favorite cake since she was a teenager. I still make it for her birthday whenever possible. I also add crushed pineapple on top of the cake once its baked. (make sure its very well drained I recommend taking a big spoon and pressing down on the crushed pineapple to get additional liquid out before placing it on the cake. Then I take two packages of pistachio pudding and a container of coolwhip and place that on top for a very very yummy desert. My son loves helping me make this cake and hes five!!

Made it once with pistachio and it was so moist! Making it again for Easter with a lemon cake mix, lemon pudding and skipping the food color and almond extract.

We also make a pudding and whipped cream frosting. It is a grand finale to a St. Patrick's Day Dinner.

I have been making this pistachio cake for years. No almond flavoring or food coloring. I frost it, using 1 1/12 pints of whipping cream with two boxes of instant pistachio pudding added....It's a family favorite

I've made this recipe several times. It great for people who don't like an overly sweet dessert.
