I have made this for many years, and it is a winner. I also make it with the pudding mix and cool whip for the frosting, it is Excellent!

My aunt makes this pistachio cake....with one twist. She makes a very light and wonderful frosting for the cake using another box of pistachio pudding and cool whip mixed together. Makes a wonderful cake even MORE wonderful!

This is one of the easyest cakes I have ever made. It looks wonderful besides tasting great. I added some chopped up pistachio nuts , about one cup . It made it a little more festive. Will be one of our familys favorites.

This recipie was very moist and delicious. It was a hit with my family and dissapeared within 2 days. I am going to make this again very soon.

Brought this cake to work on St. Patrick's Day everyone loved it! Very moist, good flavor. My husband didn't think it was green enough so we added a little more green food coloring to the batter. May add some extra pistachios to the batter next time too. Will definitely make again!
