Crown Jewel Dessert

Orange, lime and strawberry gelatin cubes suspended in creamy pink gelatin is a dessert classic. When sliced, the gelatin cubes shimmer like jewels.

pkg. (4-serving size) JELL-O Lime Flavor Gelatin

pkg. (4-serving size) JELL-O Orange Flavor Gelatin

pkg. (4-serving size each) JELL-O Strawberry Flavor Gelatin, divided

qt. (4 cups) boiling water, divided

cups cold water, divided

tub (8 oz.) COOL WHIP Whipped Topping, thawed, divided

Make It

PREPARE lime, orange and 1 package of the strawberry gelatins in 3 separate bowls as directed on packages, using 1 cup of the boiling water and 1/2 cup of the cold water for each flavor. Pour each flavor of gelatin into a separate 8-inch square pan. Refrigerate 4 hours or until firm. Cut gelatin into 1/2-inch cubes. Reserve 1-1/2 cups of each flavor of the gelatin cubes. Cover and refrigerate remaining gelatin cubes for snacking or another use.

ADD the remaining 1 cup boiling water to the remaining package of strawberry gelatin; stir 2 minutes or until completely dissolved. Stir in remaining 1/2 cup cold water. Refrigerate 45 minutes or until slightly thickened (consistency of unbeaten egg whites).

ADD half of the whipped topping and reserved gelatin cubes; stir gently until well blended. Pour into 9x5-inch pan sprayed with cooking spray. Refrigerate 4 hours or until firm. Unmold. Garnish with remaining whipped topping. Cut into 18 slices. Store leftover dessert in refrigerator.

How To Unmold Gelatin

Dip mold in warm water for about 15 seconds. Gently pull gelatin from around edges with moist fingers. Place moistened serving plate on top of mold. Invert mold and plate; holding mold and plate together, shake slightly to loosen. Gently remove mold and center gelatin on plate.

Helpful Hint

Toss remaining gelatin cubes with cut-up fruit for a refreshing dessert the whole family will enjoy.

Slightly complicated, but MOST worthwhile! I made this for Christmas last year, everyone loved it, and I will surely make it for Christmas this year!

My mom made this recipe while my sister and I were growing up. However, she made it with lining the trifle bowl with ladyfingers and put all of the jello(cubed) mixed in the middle with pudding. Then lined the bowl with ladyfingers and ate it like a piece of pie.. It was scrumptious.

I made this recipe years ago infact I just got the recipe from my jello recipe book out so that I could make it for a tupperware party but the original recipe calls for dream whip it is in the The New Joys of Jell-0 recipe book ( 1973)

The combonation of the flavors don't match as well as I had expected. Otherwise, it was great.

This is a great recipe for any time of year. Living in Arizona it makes a nice cool dessert for all those hot days. I used lemon flavored jello with the cool whip to add a little tartness.
