These potatoes rock! I've made them twice so far (once with the blue cheese and once without) and both times there weren't any leftovers. I will admit that they are better with a little sour cream on top (or to the side). They seem a little dry without it. I will definately make these again and again!

I would possibly make it with different cheese. My husband loved them, but I'm not a big blue cheese fan. They did turn out pretty good he said though.
