I had never heard of this recipe until I met my husband. He said his mother has made this for decades using pecans in the crust. I've tried several variations, but the only ones he likes are when I double the crust and cream cheese layers!
I've made the original recipe many times using crushed peanuts. It is spectacular!! I also served it frozen in the summer. It is very popular with my family and friends. I am looking forward to trying it low-cal with almonds.
Great, easy dessert with many possibilities. The only thing I will next time is either double or one and a half times the crust. It covered the pan but just barely.
This is a recipe that I always loved as a kid growing up. Whenever I got to choose what dessert was going to be (usually on my birthday :P), this is what I chose. Now I'm grown, I like to make this as comfort food or to take with me to gatherings. I admit, I often have trouble with the crust not sticking, but instead of throwing it out, I find it tastes just as great if you mix the cream cheese layer with the crust and spread that in the bottom of the pan. It's slightly less pretty, but the taste is exactly the same!
I made this as a dessert to take for a picnic food day at work. It was the first dessert gone! It was easy to make and perfect for summer.
