I made it with grilled chicken, crumbled blue cheese and grapes instead. I guess this is a radical recipe change, but it is wonderful!!!!

Made it for my son, he loved it. Also made it for friends and they thought it was great. I will without a doubt make it again.

I added mayo like akwaba's suggestion - I cut the shrimp into smaller pieces. I might try something other than mango next time. Everyone LOVED this recipe!
