I have made this recipe for years. I call it Hawaiian Rumaki. Where you have chicken liver in the regular Rumaki recipe, I substitute pineapple chunks (I cut the big ones in half and cut the water chestnuts in half, too), wrap with the bacon and continue the recipe. They are always a hit with everyone. I have to be sure I have enough for at least 3 per person.
