Citrus Salmon

Citrus Salmon recipe
Surprise! The citrus in our Citrus Salmon isn't lemon—it's orange juice. And the vodka is completely optional.

I have made a similar recipe. I have also made it with lime. Not a good idea. Lime tends to take the place of salt. Stick with lemon or orange.

I strongly recommend using lime juice instead of orange juice -- it gives a zestier taste. Also I didn't use the vodka and it still came out very excellent. I used vegetable oil instead of olive oil to decrease the calorie, fat and cholesterol intake. Finally I used the George Foreman grill -- VERY GOOD. Completely recommend to those on weight watchers. Salmon fillet is only 7 points and marinade is only 1. Very healthy and very tasty. Two Thumbs up!!!

Such a hit that it was requested again in less than a week, and that was the oven variety! Can't wait to try it on the grill!

Great combination of flavors in this marinade and very easy to make! It was even better with a little lemon squeezed on the fish before eating. I will definately cook the recipe again.
